Korean Beef Bowl

low sodium soy sauce

minced scallions

minced garlic

rice vinegar

honey

minced or finely grated fresh ginger

red pepper flakes

For Serving

shredded carrots

thinly sliced seedless cucumbers

toasted sesame seeds
Instructions
- If desired, quick pickle the carrots and/or cucumbers.
- In a large skillet, brown the beef over medium-high heat, breaking it into small pieces until cooked through.
- Add 1 tablespoon of soy sauce and 2/3 of the scallions when the beef is halfway cooked.
- Stir in the garlic and cook for 30 seconds once the beef is browned.
- In a small bowl, mix rice vinegar, honey, ginger, red pepper flakes, and remaining soy sauce.
- Pour the mixture over the beef and cook for 2 minutes, then remove from heat and stir in sesame oil.
- Serve hot over rice, topped with carrots, cucumbers, and sesame seeds.
