Korean Beef Bowl

Ingredients

The Beef

  • 1 pound lean ground beef
  • 3 tablespoons low sodium soy sauce
  • 1 ¼ cups minced scallions
  • 1 tablespoon minced garlic
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 2 tablespoons minced or finely grated fresh ginger
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon sesame oil

For Serving

  • 1 ½ cups shredded carrots
  • to taste thinly sliced seedless cucumbers
  • to taste toasted sesame seeds

Instructions

  1. If desired, quick pickle the carrots and/or cucumbers.
  2. In a large skillet, brown the beef over medium-high heat, breaking it into small pieces until cooked through.
  3. Add 1 tablespoon of soy sauce and 2/3 of the scallions when the beef is halfway cooked.
  4. Stir in the garlic and cook for 30 seconds once the beef is browned.
  5. In a small bowl, mix rice vinegar, honey, ginger, red pepper flakes, and remaining soy sauce.
  6. Pour the mixture over the beef and cook for 2 minutes, then remove from heat and stir in sesame oil.
  7. Serve hot over rice, topped with carrots, cucumbers, and sesame seeds.
