Ingredients

The beef and sauce

  • 2 pounds ground beef
  • ½ cup coconut aminos
  • 2 tablespoons fish sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

The vegetables and rice

  • 1 medium shallot, diced
  • 2 inches fresh ginger, peeled and grated
  • 4 cups cauliflower rice
  • 6 cups greens of choice (e.g., chopped romaine, arugula, spinach)

Optional sauce and toppings

  • ¼ cup mayo
  • 1 tablespoon hot sauce
  • to taste chopped green onions
  • to taste sliced avocado

Instructions

  1. Prepare rice or cauliflower rice as needed.
  2. Dice the shallot and grate the ginger.
  3. Heat a large skillet over medium-high heat and add sesame oil.
  4. Add the ground beef to the skillet and break it up into small bits.
  5. Mix in the shallot, ginger, red pepper flakes, garlic powder, and onion powder.
  6. Cook until the beef is browned and crispy, about 8 minutes.
  7. Add coconut aminos and fish sauce, cooking for an additional 3-4 minutes.
  8. If making the optional sauce, mix mayo and hot sauce in a small bowl.
  9. Serve the beef in a bowl over greens and rice or cauliflower rice, topping with optional sauce.
