Ground Beef with Sweet Potatoes and Spinach

Ingredients

  • 1 tbsp ghee
  • 1 small onion, finely chopped
  • 1.1 lb lean ground beef
  • ½ tsp Himalayan salt
  • ½ tsp freshly ground black pepper
  • ½ tsp garlic powder
  • ½ tsp fish sauce
  • 7-8 splashes Frank's Red Hot
  • ½ large baked sweet potato, cooled and cut into large bite size chunks
  • 6 cups baby spinach leaves
  • 2-3 tsp harissa

Instructions

  1. Melt half the ghee in a skillet over medium-high heat and sauté the chopped onion until softened.
  2. Increase the heat and add the ground beef and salt, breaking it into pieces while cooking until no longer pink.
  3. Stir in the black pepper, garlic powder, fish sauce, and Frank's Red Hot.
  4. Transfer the cooked meat to a bowl and return the skillet to heat, adding the remaining ghee and sweet potatoes.
  5. Cook the sweet potatoes until caramelized on each side.
  6. Return the meat to the skillet, mix with the sweet potatoes, and mound the spinach on top.
  7. Cover the skillet with a heat-resistant bowl and let sit for a few minutes to wilt the spinach.
  8. Gently stir the spinach into the mixture until well combined.
  9. Serve hot with harissa if desired.
