Ingredients

The base

  • 1 Tbsp unsweetened coconut oil
  • 2 medium/large sweet potatoes
  • 1 lb ground beef

The seasoning

  • 1 Tbsp garlic
  • ¼ tsp cinnamon
  • ¼ tsp sea salt

The greens

  • 4–5 handfuls baby spinach

Instructions

  1. Dice the sweet potatoes into small pieces and add them to a pre-heated large sauté pan with coconut oil, garlic, salt, and cinnamon.
  2. Coat the sweet potatoes in the oil and spices, cover with a lid, and cook on medium for 12-15 minutes, mixing occasionally.
  3. Once the sweet potatoes are semi-soft, add the ground meat to the pan and break it up as it cooks.
  4. Continue cooking until the meat is no longer pink and the sweet potatoes are tender.
  5. Add the spinach and cook until wilted, then serve immediately.
