Instructions
- Heat a skillet over medium-high heat and add ground beef, taco seasoning, and water. Cook until the beef is browned, then remove from pan.
- In the same skillet, add ½ tablespoon of oil and heat until melted.
- Add diced sweet potatoes with salt and pepper, sauté for about 10-15 minutes until almost cooked through.
- Add the remaining ½ tablespoon of oil, onions, bell pepper, and mushrooms, and sauté until vegetables are tender.
- Fold in spinach and taco meat, cooking until heated through and spinach is wilted.
- Serve with your choice of toppings.
