Ingredients

Main Ingredients

  • 1 lb. ground beef
  • 3 Tbsp. taco seasoning
  • ½ cup water
  • 1 Tbsp. olive oil or avocado oil
  • 1 medium sweet potato
  • 1 sweet bell pepper diced
  • ½ medium red onion
  • 1½–2 cups diced mushrooms
  • 2–3 cups spinach

Optional Toppings

  • to taste fresh cilantro
  • to taste green onions
  • to taste avocado
  • to taste guacamole
  • to taste jalapeños
  • to taste fried egg
  • to taste sour cream
  • to taste Mexican blend cheese or cotija cheese

Instructions

  1. Heat a skillet over medium-high heat and add ground beef, taco seasoning, and water. Cook until the beef is browned, then remove from pan.
  2. In the same skillet, add ½ tablespoon of oil and heat until melted.
  3. Add diced sweet potatoes with salt and pepper, sauté for about 10-15 minutes until almost cooked through.
  4. Add the remaining ½ tablespoon of oil, onions, bell pepper, and mushrooms, and sauté until vegetables are tender.
  5. Fold in spinach and taco meat, cooking until heated through and spinach is wilted.
  6. Serve with your choice of toppings.
