Ingredients

The main ingredients

  • 1 tbsp ghee
  • 2 pieces boneless skinless chicken breasts (about 300g each)
  • 1 medium sweet potato (about 350g)
  • 1 piece gala apple
  • 1 cup water (divided)
  • 1 cup baby spinach leaves
  • 2 tbsp organic raisins

The seasonings

  • ½ tsp Himalayan salt
  • ½ tsp ground black pepper
  • 1 tsp garam masala
  • ¼ tsp freshly ground nutmeg

Instructions

  1. Melt ghee in a large skillet over medium-high heat.
  2. Add chicken and cook until golden brown, about 6 to 8 minutes.
  3. Add ½ cup of water to deglaze the pan, then stir in salt, pepper, garam masala, and nutmeg.
  4. Add diced apple and sauté for about one minute until slightly softened.
  5. Add spiralized sweet potato and another ½ cup of water, cooking until sweet potato is soft and water is almost evaporated.
  6. Remove from heat and stir in chopped spinach and raisins until evenly distributed and spinach is wilted.
  7. Serve immediately.
