Instructions
- Heat a nonstick oven-safe skillet over medium heat.
- Add olive oil and onions, cooking until golden.
- Stir in sweet potatoes and thyme, seasoning with salt, garlic powder, paprika, and pepper.
- Add water, cover, and cook until sweet potatoes are tender.
- Incorporate chicken and cook for a couple of minutes.
- Make wells in the hash, crack an egg into each, season, and cover.
- Cook until egg whites are set and yolks are runny, then top with herbs.
