Ingredients

  • 1 tbsp olive oil

  • 10 oz peeled sweet potatoes, diced into ½-inch pieces
  • 2 tsp fresh thyme or ¾ tsp dried thyme
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • 8 oz leftover rotisserie chicken breast, diced into ½-inch pieces
  • 4 large eggs
  • 1 tbsp fresh chopped chives

Instructions

  1. Heat a nonstick oven-safe skillet over medium heat.
  2. Add olive oil and onions, cooking until golden.
  3. Stir in sweet potatoes and thyme, seasoning with salt, garlic powder, paprika, and pepper.
  4. Add water, cover, and cook until sweet potatoes are tender.
  5. Incorporate chicken and cook for a couple of minutes.
  6. Make wells in the hash, crack an egg into each, season, and cover.
  7. Cook until egg whites are set and yolks are runny, then top with herbs.
