Shrimp Creole

Ingredients

  • ½ pound large shrimp
  • ¼ cup olive or canola oil
  • 8 oz smoked sausage
  • 1 medium onion, chopped
  • ¼ cup celery, diced
  • 1 small bell pepper, chopped
  • 1-2 teaspoons fresh thyme
  • 2 teaspoons minced garlic
  • 1 each bay leaf
  • 2 teaspoons creole seasoning
  • ½ - 1 can 14 oz stewed tomatoes
  • 2 cups broth or water
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon bouillon powder (optional)
  • 1-2 each green onions, chopped
  • 2 tablespoons parsley, chopped

Instructions

  1. Season the shrimp with creole spice and sauté in oil for 1-2 minutes, then set aside.
  2. In the same pan, add remaining oil and sauté onions, celery, bell pepper, thyme, and garlic for 2-3 minutes.
  3. Add bay leaf, creole seasoning, tomatoes, broth, and Worcestershire sauce to the pan.
  4. Bring to a boil and simmer for 10-15 minutes, adding bouillon if needed.
  5. Return shrimp and sausage to the pan, adjust seasoning, and cook for another 2-3 minutes.
  6. Garnish with green onions and parsley, then serve over rice or fettuccine.
