Instructions
- Preheat the oven to 350°F and prepare a mini muffin pan.
- Melt the butter in a saucepan, then mix in sugar, vanilla, and peppermint extract.
- Add eggs one at a time, mixing well after each addition, then stir in cocoa.
- Combine flour, baking powder, and salt, then mix until incorporated.
- Fill muffin cups slightly more than halfway and bake for 12-15 minutes.
- Cool the brownie bites for 5 minutes before removing them from the pan.
- Melt white chocolate and dip the tops of the brownie bites, then sprinkle with crushed candy canes.
