Instructions
- Preheat the oven to 350°F and prepare a mini muffin tin.
- Melt the butter, sugar, cocoa powder, and salt in a heat-proof bowl over simmering water.
- Remove from heat and let cool until warm, then stir in vanilla and espresso powder.
- Add eggs one at a time, mixing well after each addition until the batter is thick and shiny.
- Sprinkle flour over the batter and stir until combined, then mix for an additional 40 turns.
- Spoon the batter into the mini muffin tins, filling each about ¾ full.
- Add any desired toppings before baking.
- Bake for about 12 minutes, then cool in the pan for 15 minutes before transferring to a wire rack.
