Ingredients

The batter

  • 3 eggs eggs
  • ¾ cup coconut sugar
  • ½ cup coconut oil, melted
  • cup natural peanut butter
  • 1 tsp vanilla
  • ½ cup almond flour
  • ¼ cup cocoa powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup mini chocolate chips

Toppings

  • ¼ tsp peanut butter for topping
  • to taste more mini chocolate chips for topping

Instructions

  1. 1. Preheat the oven to 350°F and spray a mini muffin tin with nonstick spray.
  2. 2. In a large bowl, whisk together the eggs and coconut sugar.
  3. 3. Add the melted coconut oil, peanut butter, and vanilla to the egg mixture and mix until well combined.
  4. 4. In a separate bowl, combine the almond flour, cocoa powder, baking powder, and salt.
  5. 5. Add the dry ingredients to the wet ingredients and stir until combined, then fold in the chocolate chips.
  6. 6. Scoop the batter into the muffin tins, filling them about ¾ full.
  7. 7. Add ¼ tsp of peanut butter on top of each muffin batter and sprinkle with more mini chocolate chips.
  8. 8. Bake for 14-16 minutes or until a toothpick inserted comes out clean.
  9. 9. Let cool for 10 minutes before serving.
