Healthy Peanut Butter Brownie Bites

Instructions
- 1. Preheat the oven to 350°F and spray a mini muffin tin with nonstick spray.
- 2. In a large bowl, whisk together the eggs and coconut sugar.
- 3. Add the melted coconut oil, peanut butter, and vanilla to the egg mixture and mix until well combined.
- 4. In a separate bowl, combine the almond flour, cocoa powder, baking powder, and salt.
- 5. Add the dry ingredients to the wet ingredients and stir until combined, then fold in the chocolate chips.
- 6. Scoop the batter into the muffin tins, filling them about ¾ full.
- 7. Add ¼ tsp of peanut butter on top of each muffin batter and sprinkle with more mini chocolate chips.
- 8. Bake for 14-16 minutes or until a toothpick inserted comes out clean.
- 9. Let cool for 10 minutes before serving.
