Ingredients

  • 2 units eggs (or flax eggs)
  • 1 cup non-dairy milk
  • 1 cup gluten free flour (or oat flour or regular flour)
  • cup cacao powder
  • 1 cup peanut butter
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ½ cup coconut sugar
  • a pinch sea salt
  • ½ cup dairy free chocolate chips

Instructions

  1. Preheat the oven to 350°F and line an 8x8 baking dish with parchment paper, greasing the dish first.
  2. In a medium bowl, whisk together the flour, cacao powder, baking powder, coconut sugar, and salt.
  3. In another bowl, whisk together the eggs, non-dairy milk, peanut butter, and vanilla extract, leaving some clumps of peanut butter.
  4. Combine the wet and dry ingredients gently until incorporated.
  5. Fold in ¼ cup of the chocolate chips.
  6. Pour the batter into the prepared baking dish, smoothing it out evenly.
  7. Drizzle extra peanut butter on top and swirl it with a knife.
  8. Sprinkle the remaining chocolate chips on top and bake for 20-23 minutes.
  9. Let the brownies cool before slicing into 12 squares.
