Peanut Butter Swirl Brownies

Ingredients

The brownie base

  • ¾ cup all purpose flour
  • ½ tsp salt
  • ¼ tsp baking soda
  • ¾ cup brown sugar
  • ½ cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 tbsp water
  • 2 flax eggs flax eggs
  • 1 cup chocolate chips, melted
  • 1 cup chocolate chips, unmelted

The peanut butter swirl

  • ¼ cup runny peanut butter

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Melt the chocolate chips in the microwave, stirring until completely melted.
  3. In a medium bowl, sift together the flour, salt, and baking soda.
  4. In a separate bowl, mix the flax eggs, brown sugar, and coconut oil until combined.
  5. Add the water and vanilla extract to the wet mixture.
  6. Combine the dry mixture with the wet mixture and melted chocolate chips, stirring until well combined.
  7. Stir in the unmelted chocolate chips.
  8. Pour the batter into a greased or parchment-lined 8x8 square pan.
  9. Warm the peanut butter in the microwave for about 15 seconds.
  10. Dollop the peanut butter on top of the brownie batter and swirl it in with a knife.
  11. Bake for 35 minutes, then let cool completely in the pan on a wire rack.
