Ingredients

The cookies

  • cups gluten-free flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup softened butter
  • ¾ cup creamy peanut butter
  • 2 tbs milk
  • ½ cup maple syrup
  • 1 unit egg
  • 1 tsp vanilla extract

The chocolate swirl

  • 1 tbs melted coconut oil
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 375°F.
  2. In a small bowl, combine the dry ingredients and set aside.
  3. In a stand mixer, beat the butter and peanut butter until smooth.
  4. Add the milk, maple syrup, egg, and vanilla to the mixer and beat well.
  5. Incorporate the dry ingredients into the wet mixture until combined.
  6. Roll tablespoon-sized portions of dough into balls, flatten slightly, and place on a cookie sheet.
  7. Bake for 8-9 minutes, ensuring they do not brown.
  8. Cool the cookies completely on a wire rack.
  9. Melt the coconut oil and chocolate chips together, then drizzle over the cooled cookies and let set.
