Peppermint Chocolate Brownies

Ingredients

The brownies

  • 1 cup oat flour
  • ½ teaspoon fine sea salt
  • ¼ teaspoon baking soda
  • 2 large eggs
  • ¾ cup brown sugar
  • ¾ cup coconut oil
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips, melted
  • 1 cup chocolate chips
  • ½ teaspoon peppermint extract

The white chocolate candy cane topping

  • ¼ cup white chocolate
  • ½ teaspoon coconut oil
  • a small drop peppermint extract
  • 2 pieces crushed candy canes

Instructions

  1. Preheat the oven to 325°F.
  2. Melt the chocolate chips in the microwave, stirring until completely melted.
  3. In a medium bowl, sift together the oat flour, salt, and baking soda.
  4. In another bowl, mix the eggs, brown sugar, and coconut oil until combined.
  5. Add the water and vanilla extract to the wet mixture, then combine with the dry mixture and melted chocolate.
  6. Stir in the chocolate chips and peppermint extract.
  7. Pour the batter into a greased and lined 8x8 square pan and bake for 35 minutes.
  8. Allow the brownies to cool completely in the pan on a wire rack.
  9. For the topping, melt the white chocolate and mix in the coconut oil and peppermint extract.
  10. Drizzle the white chocolate mixture over the cooled brownies and sprinkle with crushed candy canes.
