Instructions
- Preheat the oven to 325°F.
- Melt the chocolate chips in the microwave, stirring until completely melted.
- In a medium bowl, sift together the oat flour, salt, and baking soda.
- In another bowl, mix the eggs, brown sugar, and coconut oil until combined.
- Add the water and vanilla extract to the wet mixture, then combine with the dry mixture and melted chocolate.
- Stir in the chocolate chips and peppermint extract.
- Pour the batter into a greased and lined 8x8 square pan and bake for 35 minutes.
- Allow the brownies to cool completely in the pan on a wire rack.
- For the topping, melt the white chocolate and mix in the coconut oil and peppermint extract.
- Drizzle the white chocolate mixture over the cooled brownies and sprinkle with crushed candy canes.
