Ingredients

The chicken

  • 1 pound skinless chicken breasts
  • 1 cup chicken broth
  • to taste chicken rub or seasoning
  • to taste salt and pepper

The dip mixture

  • 4 oz cream cheese
  • 1 cup plain Greek yogurt or sour cream
  • 1 cup Buffalo sauce
  • 2 cups shredded cheddar cheese
  • 1 tablespoon chopped green onions

Instructions

  1. Season the chicken breasts with chicken rub, salt, and pepper.
  2. Add the chicken and chicken broth to the slow cooker.
  3. Cook on high for 4 hours or low for 8 hours, then shred the chicken.
  4. Preheat the oven to 375 degrees.
  5. In a bowl, combine 1 cup of shredded cheddar cheese, cream cheese, Greek yogurt (or sour cream), and Buffalo sauce, mixing until combined.
  6. Add the shredded chicken to the mixture and adjust seasoning if necessary.
  7. Spray an 8x8 baking dish with cooking spray and transfer the chicken mixture into it.
  8. Top with the remaining 1 cup of shredded cheese.
  9. Bake for 20-25 minutes until the cheese is bubbly.
  10. Sprinkle with green onions and serve.
