Shortbread Gluten-Free Cereal

Ingredients

Dry Ingredients

  • 1 cup almond flour
  • cup coconut flour
  • cup protein powder or collagen powder
  • 2 tablespoons psyllium husk powder
  • ¾ teaspoon baking soda

Wet Ingredients

  • ½ cup melted coconut oil
  • 2 tablespoons water
  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 200°F.
  2. Combine the dry ingredients in a mixing bowl and whisk together.
  3. Add the wet ingredients to the dry ingredients and mix with an electric mixer.
  4. Line a cookie sheet with parchment paper and pour the mixture onto it.
  5. Cover with another piece of parchment and roll out to the desired thickness.
  6. Remove the top parchment and score the dough into squares with a pizza wheel.
  7. Bake for about 1½ hours until golden brown, noting that the bottom will be darker.
  8. Let cool completely before breaking into pieces.
  9. Serve with almond milk and sliced strawberries.
