Ingredients

The base

  • ⅔ to ¾ cup creamy almond butter, cashew butter, or sunflower seed butter
  • cup honey or maple syrup
  • ⅓ to ½ cup raw sugar or sugar substitute
  • 1 teaspoon pure vanilla extract
  • a pinch sea salt

The mix-ins

  • 2 cups unsweetened shredded coconut
  • 2 cups gluten-free cereal

Optional ingredients

  • to taste cocoa powder
  • to taste protein powder
  • to taste freeze-dried fruit
  • to taste dark chocolate chips

Instructions

  1. Line an 8 x 8-inch baking pan with parchment paper or spray it with cooking spray.
  2. In a large saucepan over medium-low heat, whisk together the nut butter, honey, and sugar until it comes to a boil, stirring constantly.
  3. Remove the saucepan from heat and stir in the vanilla and salt.
  4. Quickly stir in the coconut and cereal until evenly coated.
  5. Transfer the mixture to the prepared baking pan and press down gently.
  6. Chill in the fridge for 30 to 45 minutes, then cut into bars.
