Healthy Cereal Bars

coconut oil (for melting chocolate)
Instructions
- 1. Pour cereal into a large mixing bowl.
- 2. In a saucepan, combine peanut butter, honey, coconut oil, and salt. Heat over medium until warmed through, about two minutes.
- 3. Turn off the heat and add vanilla.
- 4. Pour the mixture over the cereal and mix until well coated.
- 5. Press the mixture into an 8x8 pan very tightly, using wet hands to compact it.
- 6. Drizzle melted chocolate over the top and place in the freezer for at least 1 hour.
- 7. Let sit at room temperature for 5 minutes before cutting into bars.
- 8. Store in the freezer.
