Ingredients

The pasta

  • 16 ounces pasta of choice
  • 1 cup pasta water

The sauce

  • ¼ cup unsalted butter
  • 2 cloves garlic
  • 3 tablespoons olive oil
  • 2 pieces lemons (zest and juice)
  • 1 cup heavy cream
  • cup grated Parmesan-Reggiano
  • 1 handful Italian parsley (minced)

Seasoning

  • to taste Kosher salt

Instructions

  1. 1. Boil salted water in a medium pot and cook the pasta until 1 minute under al dente.
  2. 2. In a skillet over medium heat, melt the butter and add minced garlic, olive oil, lemon zest, lemon juice, and salt.
  3. 3. Reserve about 1 cup of pasta water.
  4. 4. Add heavy cream and ½ cup of pasta water to the skillet, simmer for about 3 minutes to thicken the sauce.
  5. 5. Add the cooked pasta and grated cheese to the skillet, mixing vigorously for 1 minute for an even coating.
  6. 6. Serve garnished with minced parsley or black pepper.
