Ingredients

The Chicken Nuggets

  • pounds chicken breast
  • 2 cups almond flour
  • 1 teaspoon fine sea salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cumin
  • teaspoon pepper
  • 4 large eggs

The Honey Mustard Sauce

  • ¼ cup olive oil
  • ¼ cup Dijon mustard
  • ¼ cup honey
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 450°F.
  2. In a mixing bowl, combine almond flour, salt, garlic powder, onion powder, cumin, and pepper.
  3. In a separate bowl, whisk the eggs and set aside.
  4. Skewer a piece of chicken, dip it in the egg mixture, and let the excess run off.
  5. Coat the chicken in the flour mixture, brushing it over and shaking off excess.
  6. Repeat the dipping process in egg and flour for each nugget.
  7. Place the coated nuggets on a greased wire rack over a cookie sheet.
  8. Bake for about 20 minutes or until browned.
  9. Whisk together the ingredients for the Honey Mustard Sauce and serve with the nuggets.
