Ingredients

Baked Chicken Nuggets

  • 6 ounces tortilla chips
  • teaspoons garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
  • pounds boneless skinless chicken breasts
  • 2 tablespoons avocado oil
  • to taste cooking spray

Honey-Mustard Dipping Sauce

  • ½ cup mayonnaise
  • ¼ cup spicy brown mustard
  • 2 tablespoons pure honey
  • ½ teaspoon fine salt
  • ¼ teaspoon dried thyme
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Crush the tortilla chips in a food processor or by hand until finely crushed.
  3. Combine the crushed chips with garlic powder, onion powder, paprika, salt, and pepper in a shallow dish.
  4. Toss the chicken pieces in avocado oil to coat.
  5. Coat the chicken pieces in the seasoned chip mixture, pressing to ensure they are well coated.
  6. Arrange the coated chicken pieces on the baking sheet and lightly spray with cooking spray.
  7. Bake for 8 minutes, flip the chicken, spray again, and bake for an additional 8-10 minutes until cooked through.
  8. While the chicken is baking, whisk together all ingredients for the dipping sauce.
  9. Serve the baked nuggets with the dipping sauce.
