Ingredients

The chicken

  • lbs boneless skinless chicken breasts, cut into 1-inch cubes

The coating

  • 2 cups panko bread crumbs
  • 2 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ¾ tsp dried thyme
  • ¼ tsp cayenne pepper (optional)
  • salt and pepper to taste

The binding

  • 2 large eggs

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with a wire rack.
  2. Toss panko with olive oil on a baking sheet and spread evenly.
  3. Toast the panko in the oven for 3 to 5 minutes until golden brown.
  4. Mix the toasted panko with paprika, garlic powder, thyme, cayenne, salt, and pepper.
  5. Whisk together the eggs with a pinch of salt and pepper.
  6. Dredge chicken pieces in the egg mixture, then coat with the panko mixture.
  7. Place the coated chicken on the wire rack, leaving space between pieces.
  8. Bake until the chicken is cooked through, about 15 to 19 minutes, or until the internal temperature reaches 165°F.
