Instructions
- Preheat the oven to 400°F and prepare a baking sheet with a wire rack.
- Toss panko with olive oil on a baking sheet and spread evenly.
- Toast the panko in the oven for 3 to 5 minutes until golden brown.
- Mix the toasted panko with paprika, garlic powder, thyme, cayenne, salt, and pepper.
- Whisk together the eggs with a pinch of salt and pepper.
- Dredge chicken pieces in the egg mixture, then coat with the panko mixture.
- Place the coated chicken on the wire rack, leaving space between pieces.
- Bake until the chicken is cooked through, about 15 to 19 minutes, or until the internal temperature reaches 165°F.
