Parmesan Baked Chicken Nuggets

Ingredients

The chicken nuggets

  • 2 pieces boneless skinless chicken breasts
  • 1 cup panko bread crumbs
  • cup grated Parmesan cheese
  • ¼ teaspoon coarse salt
  • 1 tablespoon vegetable oil
  • cup all-purpose flour
  • 2 large eggs
  • as needed spray cooking spray

The dipping sauce

  • ¼ cup ketchup
  • 3 tablespoons sriracha or spicy chili sauce
  • 2 tablespoons mayonnaise

Instructions

  1. Combine all ingredients for the Spicy Ketchup Dipping Sauce and chill.
  2. Preheat the oven to 400°F (207°C). Cut the chicken into 1.5-2 inch pieces.
  3. Spread the panko on a baking sheet and bake for about 3 minutes until light brown.
  4. Mix the baked panko with Parmesan and coarse salt, then drizzle with oil and mix well.
  5. Set out flour and eggs in separate dishes. Increase oven temperature to 450°F (218°C).
  6. Coat a wire rack with cooking spray and place it on a baking sheet.
  7. Coat chicken pieces in flour, dip in egg, and coat with the panko mixture.
  8. Place the coated chicken on the rack and bake for 12-14 minutes, turning halfway through.
  9. Serve the nuggets with the spicy ketchup dipping sauce.
