Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • ½ cup finely-grated or powdered Parmesan
  • ½ teaspoon dried thyme
  • to taste coarse sea salt and freshly-cracked black pepper
  • ½ cup all-purpose flour
  • 2 large eggs
  • as needed cooking spray
  • optional sauces for serving

Instructions

  1. Preheat the oven to 400°F and toast the panko breadcrumbs until golden brown.
  2. Mix the toasted panko with Parmesan and thyme in a bowl.
  3. Prepare the baking sheet with parchment paper.
  4. Set up a breading station with flour and beaten eggs in separate shallow dishes.
  5. Season the chicken pieces with salt and pepper, then coat them in flour, dip in egg, and finally coat with the panko mixture.
  6. Place the coated chicken nuggets on the prepared baking sheet.
  7. Increase the oven temperature to 450°F and bake the nuggets for 10-12 minutes, flipping halfway through.
  8. Serve the chicken nuggets warm with dipping sauces if desired.
