Keto Chicken Nuggets

Ingredients

The chicken

  • 2 medium Boneless skinless chicken breasts

The coating

  • ¼ cup Mayonnaise
  • 1 tsp White vinegar
  • 1 cup Wholesome Yum Blanched Almond Flour
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

For frying

  • 2 tbsp Olive oil

Instructions

  1. Brine the chicken in salt water for up to 1 hour, then drain and pat dry.
  2. Cut the chicken into nugget-sized pieces.
  3. In a small bowl, whisk together mayonnaise and vinegar.
  4. In another bowl, mix almond flour with salt and pepper.
  5. Coat each chicken piece in the mayonnaise mixture, then press into the almond flour mixture.
  6. Heat oil in a skillet over medium-high heat and fry the nuggets until golden on both sides.
  7. Alternatively, bake in a preheated oven at 450°F for 6-8 minutes on each side.
