Instructions
- Brine the chicken in salt water for up to 1 hour, then drain and pat dry.
- Cut the chicken into nugget-sized pieces.
- In a small bowl, whisk together mayonnaise and vinegar.
- In another bowl, mix almond flour with salt and pepper.
- Coat each chicken piece in the mayonnaise mixture, then press into the almond flour mixture.
- Heat oil in a skillet over medium-high heat and fry the nuggets until golden on both sides.
- Alternatively, bake in a preheated oven at 450°F for 6-8 minutes on each side.
