Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 1 cup almond flour
  • ¼ cup chickpea flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 2 eggs eggs
  • as needed spray olive oil spray

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the chicken breasts into bite-sized pieces and set aside.
  3. Mix almond flour, chickpea flour, garlic powder, paprika, salt, and pepper on a plate.
  4. Whisk the eggs in a bowl.
  5. Coat each piece of chicken with egg, then dredge in the flour mixture, ensuring it's fully coated.
  6. Arrange the coated chicken nuggets on the baking sheet, leaving space between each nugget.
  7. Bake for 12-15 minutes until fully cooked through.
  8. For air fryer, preheat to 400°F and cook for 8-10 minutes, ensuring nuggets do not touch.
