Instructions
- 1. Preheat the oven to 450°F or the air fryer to 400°F.
- 2. Cut the chicken breasts into nugget-sized pieces.
- 3. Whisk together the eggs and pickle juice in a bowl.
- 4. In another bowl, mix the almond flour, crushed crackers, paprika, salt, and pepper.
- 5. Dip each chicken piece into the egg mixture, then coat in the flour mixture.
- 6. For baking: Line a baking sheet with foil, grease it, and bake the nuggets for 5-6 minutes, flip, and bake for another 5-6 minutes until golden brown and cooked through.
- 7. For air frying: Spray the basket with nonstick spray, place the nuggets in a single layer, and fry for 9-11 minutes, turning halfway through.
