Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 cup plain breadcrumbs
  • 2 tablespoons white whole wheat flour
  • 1 tablespoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 large eggs
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400ºF and place a metal rack on top of a baking sheet, spraying it with non-stick cooking spray.
  2. Cut the chicken breasts into 1-inch nuggets.
  3. In a large bowl, combine the breadcrumbs, flour, garlic powder, paprika, thyme, salt, and pepper.
  4. In a separate bowl, whisk the eggs until combined.
  5. Dip each chicken nugget in the egg wash, then coat with the breadcrumb mixture one at a time.
  6. Place the coated chicken nuggets on the wire rack over the baking sheet and drizzle with olive oil.
  7. Bake for 14-16 minutes, flipping halfway through, until they reach an internal temperature of 165ºF.
  8. Broil for 1-2 minutes to achieve a golden brown color before serving.
