Crispy Homemade Chicken Nuggets

Instructions
- Preheat the oven to 400ºF and place a metal rack on top of a baking sheet, spraying it with non-stick cooking spray.
- Cut the chicken breasts into 1-inch nuggets.
- In a large bowl, combine the breadcrumbs, flour, garlic powder, paprika, thyme, salt, and pepper.
- In a separate bowl, whisk the eggs until combined.
- Dip each chicken nugget in the egg wash, then coat with the breadcrumb mixture one at a time.
- Place the coated chicken nuggets on the wire rack over the baking sheet and drizzle with olive oil.
- Bake for 14-16 minutes, flipping halfway through, until they reach an internal temperature of 165ºF.
- Broil for 1-2 minutes to achieve a golden brown color before serving.
