Ingredients

Breading

  • 1 cup plain breadcrumbs
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • to taste freshly cracked pepper
  • 2 Tbsp neutral oil

Yogurt Slurry

  • cup Greek yogurt
  • tsp salt
  • 3 Tbsp water

Chicken

  • 1 piece boneless, skinless chicken breast (about 2/3 lb.)

Instructions

  1. Preheat the oven to 425ºF and prepare a baking sheet with a wire rack.
  2. Mix breadcrumbs, garlic powder, smoked paprika, salt, and pepper in a bowl.
  3. Drizzle neutral oil over the breadcrumb mixture and stir until coated.
  4. In another bowl, combine Greek yogurt, salt, and water until smooth.
  5. Trim chicken breast and cut it into small pieces.
  6. Dip each chicken piece in the yogurt slurry, then coat it with the breadcrumb mixture.
  7. Place the coated nuggets on the wire rack and bake for 23-25 minutes until golden brown.
  8. Let cool for 3-5 minutes before serving.
