Ingredients

  • 1 lb chicken breasts (boneless, skinless)
  • 1 large egg
  • 1 cup whole-wheat breadcrumbs
  • ¼ cup parmesan cheese (grated)
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • as needed tablespoon olive oil (for cooking)

Instructions

  1. Chop the chicken into small chunks and season with salt and pepper.
  2. Beat the egg in a shallow bowl.
  3. In another bowl, mix breadcrumbs, cheese, paprika, and garlic powder.
  4. Use one hand for wet ingredients and the other for dry to coat the chicken in egg and then breadcrumbs.
  5. Heat oil in a large sauté pan over medium-low heat.
  6. Cook the chicken nuggets for several minutes on each side until golden brown and cooked through.
  7. Transfer the nuggets to a paper towel-lined plate to drain excess oil.
  8. Serve with ketchup or honey mustard, and freeze any leftovers.
