Ingredients

  • 2 ½ cups rolled oats
  • ½ cup oat flour
  • ½ cup reduced fat shredded coconut
  • 3 tablespoons granulated sweetener of choice
  • ½ teaspoon cinnamon
  • 4 tablespoons coconut oil, melted
  • 6 tablespoons maple syrup

Instructions

  1. Preheat the oven to 180C/350F and line a large baking dish with parchment paper.
  2. In a large mixing bowl, combine the dry ingredients and mix well.
  3. Add the melted coconut oil and maple syrup, mixing until completely combined.
  4. Transfer the mixture onto the lined baking dish and bake for 30 minutes, stirring halfway through.
  5. Remove from the oven and let cool completely before breaking apart.
