Vegan Ricotta

Ingredients

  • 14 ounces tofu, firm, drained
  • 1 clove garlic
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • small handful fresh herbs (basil, Italian parsley, cilantro, chives, scallions) or 1 teaspoon dried herbs
  • 2 tablespoons olive oil
  • 1-3 teaspoons nutritional yeast (optional)

Instructions

  1. Drain the tofu and break it up with your hands.
  2. Place the tofu in a food processor with the other ingredients.
  3. Pulse until the mixture is well combined and has a ricotta-like texture.
