Instructions
- Grate the zucchini and set it over the sink to drain.
- Preheat the oven to 325°F (163°C) and line a loaf pan with parchment paper.
- In a large bowl, beat together the butter and Besti until fluffy.
- Beat in the eggs and vanilla extract.
- Mix in the almond flour, cinnamon, baking powder, sea salt, and xanthan gum if using.
- Wrap the grated zucchini in cheesecloth and squeeze out as much moisture as possible, then stir it into the batter.
- Fold in the walnuts if using.
- Transfer the batter to the prepared pan and smooth the top.
- Bake for 40-50 minutes until golden brown, tenting with foil if necessary.
- Let the bread cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
