Instructions
- Preheat the oven to 475°F.
- In a deep skillet, combine all sauce ingredients except the slurry and bring to a boil, then add chicken breasts.
- Reduce heat and simmer for 25-30 minutes until the chicken is cooked and tender.
- Cut potatoes into strips, pat dry, and toss with olive oil and seasonings.
- Spread fries on a lined baking sheet and bake for 15-20 minutes until golden, tossing halfway through.
- Once the chicken is cooked, shred it with forks and set aside.
- Cook the peas as per your preference.
- Add the slurry to the sauce, bring to a boil, and simmer for 2-3 minutes until thickened.
- Assemble the sandwiches with chicken on toasted bread, serve with fries, and ladle sauce over the sandwich, topping with peas.
