Ingredients

The sandwich

  • 1 piece boneless, skinless chicken breast
  • 2 slices whole grain bread
  • to taste cooked green peas

Oven baked fries

  • 1-2 pieces potatoes
  • 1-2 tbsp extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste thyme
  • to taste dried parsley
  • to taste hot pepper flakes

Sauce

  • 3 cups chicken or turkey stock
  • 2 cups water
  • 1 piece bay leaf
  • ½ tsp paprika
  • ½ tsp thyme
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp pepper
  • a pinch cayenne pepper
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 3 tbsp corn starch
  • to dilute water cold water (for slurry)

Instructions

  1. Preheat the oven to 475°F.
  2. In a deep skillet, combine all sauce ingredients except the slurry and bring to a boil, then add chicken breasts.
  3. Reduce heat and simmer for 25-30 minutes until the chicken is cooked and tender.
  4. Cut potatoes into strips, pat dry, and toss with olive oil and seasonings.
  5. Spread fries on a lined baking sheet and bake for 15-20 minutes until golden, tossing halfway through.
  6. Once the chicken is cooked, shred it with forks and set aside.
  7. Cook the peas as per your preference.
  8. Add the slurry to the sauce, bring to a boil, and simmer for 2-3 minutes until thickened.
  9. Assemble the sandwiches with chicken on toasted bread, serve with fries, and ladle sauce over the sandwich, topping with peas.
