Ingredients

  • 1 lb hot Italian turkey or chicken sausage
  • 1 small onion, diced small
  • 8 oz mushrooms, diced
  • 2 cloves garlic, minced
  • 4 cups herb seasoned stuffing mix
  • ½ cup fat free reduced sodium chicken broth
  • 2 tablespoons light butter, melted
  • 5 oz 50% reduced fat sharp cheddar, shredded
  • 2 cups skim milk
  • 16 oz carton fat free egg substitute
  • ½ teaspoon black pepper

Instructions

  1. 1. Preheat the oven to 325°F and prepare a 9x13 baking dish with cooking spray.
  2. 2. In a large skillet over medium-high heat, cook the sausage, breaking it up until it starts to brown.
  3. 3. Add the onion, mushrooms, and garlic to the skillet and cook until the vegetables are softened.
  4. 4. Transfer the sausage mixture to a mixing bowl and stir in the stuffing mix.
  5. 5. Pour the stuffing and sausage mixture into the prepared baking dish, drizzle with chicken broth and melted butter, and sprinkle cheese on top.
  6. 6. In a separate bowl, whisk together the milk, egg substitute, and pepper, then pour over the casserole.
  7. 7. Bake for about 40 minutes or until set and cooked through, then let it cool for 5 minutes before cutting into 9 pieces.
