Ingredients

The fish

  • 2 lb. Steelhead Trout Filet
  • 1 tbsp. White Wine
  • 1 tbsp. Minced Garlic
  • 1 tsp. Lemon Juice
  • 1 tsp. Sea Salt
  • ¼ tsp. Black Pepper
  • ¼ tsp. Creole Seasoning

The glaze

  • ¼ cup Honey
  • ¼ cup Brown Sugar
  • ½ cup Balsamic Vinegar

The vegetables

  • 1 lb. Broccoli Florets
  • 1 tbsp. Olive Oil
  • ¼ tsp. Oregano

Instructions

  1. 1. Preheat the oven to 375°F and grease a cast-iron skillet.
  2. 2. Slice the steelhead trout into equal portions and season with sea salt, black pepper, and creole seasoning.
  3. 3. Add the seasoned trout to the skillet and set aside.
  4. 4. In a separate pan, combine honey, balsamic vinegar, lemon juice, white wine, brown sugar, and minced garlic, and cook on low heat for 5 minutes.
  5. 5. Increase the heat to medium and cook until the mixture thickens, about 5 to 10 minutes.
  6. 6. Pour the honey balsamic glaze over the trout in the skillet.
  7. 7. Toss the broccoli florets in olive oil and sea salt, then add to the skillet with the trout.
  8. 8. Sprinkle oregano over the fish and broccoli.
  9. 9. Bake for 10 minutes.
