Instructions
- Preheat the oven to 400ºF.
- Combine olive oil, minced garlic, Italian seasoning, and salt in a small bowl.
- Slice each eggplant in half lengthwise and score a crosshatch pattern into the flesh.
- Drizzle the seasoned olive oil over the cut surfaces of the eggplant.
- Place the eggplant on a baking sheet, cut sides down, and roast for about 60 minutes.
- While the eggplant roasts, prepare the meat sauce by browning the ground beef in olive oil.
- Add diced onion and butter to the beef and sauté until the onion is soft.
- Add crushed tomatoes, Italian seasoning, and pepper to the meat mixture, then simmer.
- Once the eggplant is done roasting, flip it and top with the meat sauce and Parmesan.
