Roasted Eggplant with Meat Sauce

Ingredients

The roasted eggplant

  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp Italian seasoning blend
  • ¼ tsp salt
  • 2 eggplant about 7″-8″ long

The meat sauce

  • ½ lb. ground beef
  • 1 Tbsp olive oil
  • 1 small onion
  • 2 Tbsp butter
  • 28 oz. crushed tomatoes
  • ½ tsp Italian seasoning blend
  • to taste freshly cracked pepper
  • ½ tsp salt
  • 2 Tbsp grated Parmesan

Instructions

  1. Preheat the oven to 400ºF.
  2. Combine olive oil, minced garlic, Italian seasoning, and salt in a small bowl.
  3. Slice each eggplant in half lengthwise and score a crosshatch pattern into the flesh.
  4. Drizzle the seasoned olive oil over the cut surfaces of the eggplant.
  5. Place the eggplant on a baking sheet, cut sides down, and roast for about 60 minutes.
  6. While the eggplant roasts, prepare the meat sauce by browning the ground beef in olive oil.
  7. Add diced onion and butter to the beef and sauté until the onion is soft.
  8. Add crushed tomatoes, Italian seasoning, and pepper to the meat mixture, then simmer.
  9. Once the eggplant is done roasting, flip it and top with the meat sauce and Parmesan.
