Ingredients

The chicken

  • 16 oz chicken breasts
  • 1 tbsp olive oil

The sauce

  • ¾ cup unsweetened almond milk
  • ¼ cup heavy whipping cream
  • 1 tbsp flour
  • 1 tbsp butter
  • 1 tbsp fresh thyme
  • to taste Italian seasoning
  • to taste McCormick's Grill Mates Montreal Chicken Seasoning
  • to taste salt
  • to taste pepper

The vegetables

  • 8 oz mushrooms
  • 4 cloves garlic

The bacon

  • 6 slices uncured bacon

Instructions

  1. 1. Heat a large skillet on medium-high heat.
  2. 2. Season the chicken breasts with the seasonings.
  3. 3. Add olive oil to the skillet and pan sear each side of the chicken for 3-4 minutes until brown.
  4. 4. Set the chicken aside on a plate.
  5. 5. Add mushrooms and garlic to the skillet and sauté until soft.
  6. 6. In a saucepan, melt the butter, then add flour and stir until combined.
  7. 7. Add almond milk and heavy cream to the saucepan and stir.
  8. 8. Pour the cream sauce into the skillet with bacon and thyme, and season with salt and pepper.
  9. 9. Bring to a simmer until the sauce thickens.
  10. 10. Add the chicken back to the skillet and heat for another minute before serving.
