Instructions
- 1. Heat a large skillet on medium-high heat.
- 2. Season the chicken breasts with the seasonings.
- 3. Add olive oil to the skillet and pan sear each side of the chicken for 3-4 minutes until brown.
- 4. Set the chicken aside on a plate.
- 5. Add mushrooms and garlic to the skillet and sauté until soft.
- 6. In a saucepan, melt the butter, then add flour and stir until combined.
- 7. Add almond milk and heavy cream to the saucepan and stir.
- 8. Pour the cream sauce into the skillet with bacon and thyme, and season with salt and pepper.
- 9. Bring to a simmer until the sauce thickens.
- 10. Add the chicken back to the skillet and heat for another minute before serving.
