Ingredients

The main ingredients

  • ½ pieces bacon, diced
  • 1.5 lbs chicken thighs
  • 1 tbsp Italian seasoning

The creamy sauce

  • ½ onion thinly sliced
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup coconut milk
  • ½ tsp sea salt
  • ¼ tsp ground black pepper
  • 1 tbsp fresh thyme, stems removed
  • 6 cups spinach or kale
  • 1 cup cooked rice (optional)

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Cook the diced bacon in a skillet over medium heat until crispy, then set aside.
  3. 3. In the same skillet, add chicken thighs and season with half the Italian seasoning; cook for 2 minutes, flip, and season with the remaining Italian seasoning, cooking for another 2 minutes.
  4. 4. Transfer the skillet to the oven and bake the chicken for 20 minutes.
  5. 5. While the chicken is baking, prepare the onions, mushrooms, and garlic.
  6. 6. After 20 minutes, remove the chicken from the oven and set aside.
  7. 7. In the skillet, add onions and mushrooms, cooking until softened.
  8. 8. Add coconut milk, garlic, salt, pepper, and thyme to the skillet; stir and simmer.
  9. 9. Return the chicken and bacon to the skillet, simmer for 3-5 minutes.
  10. 10. Serve the chicken mixture over a bed of spinach or with rice if desired.
