Creamy Keto Bacon & Mushroom Chicken Thighs

Instructions
- 1. Preheat the oven to 350°F.
- 2. Cook the diced bacon in a skillet over medium heat until crispy, then set aside.
- 3. In the same skillet, add chicken thighs and season with half the Italian seasoning; cook for 2 minutes, flip, and season with the remaining Italian seasoning, cooking for another 2 minutes.
- 4. Transfer the skillet to the oven and bake the chicken for 20 minutes.
- 5. While the chicken is baking, prepare the onions, mushrooms, and garlic.
- 6. After 20 minutes, remove the chicken from the oven and set aside.
- 7. In the skillet, add onions and mushrooms, cooking until softened.
- 8. Add coconut milk, garlic, salt, pepper, and thyme to the skillet; stir and simmer.
- 9. Return the chicken and bacon to the skillet, simmer for 3-5 minutes.
- 10. Serve the chicken mixture over a bed of spinach or with rice if desired.
