Creamy Tomato Garlic Chicken Thighs

The chicken

boneless, skinless chicken thighs
The sauce

tomato sauce (or marinara sauce)

coconut milk (full fat)

spinach

Instructions
- Pat chicken thighs dry and season with salt and pepper.
- Heat olive oil in a skillet over medium heat.
- Add chicken thighs to the skillet and cook for about 5 minutes on each side.
- Remove chicken from the skillet and set aside on a plate.
- In the same skillet, add mashed garlic, tomato sauce, and coconut milk; stir to combine.
- Bring the mixture to a gentle boil and add spinach, cooking until wilted.
- Return the chicken to the skillet and cook on low-medium heat for another 10 minutes.
- Stir in parmesan cheese and remove from heat.
- Let cool slightly before serving.
