Ingredients

The chicken

  • 1 ½ lbs boneless, skinless chicken thighs

The sauce

  • 4 cloves garlic, mashed
  • 1 ½ cups tomato sauce (or marinara sauce)
  • ½ cup coconut milk (full fat)
  • 1 tbsp olive oil
  • 2 cups spinach
  • ¼ cup fresh basil
  • ½ cup grated parmesan cheese
  • to taste salt & pepper

Instructions

  1. Pat chicken thighs dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Add chicken thighs to the skillet and cook for about 5 minutes on each side.
  4. Remove chicken from the skillet and set aside on a plate.
  5. In the same skillet, add mashed garlic, tomato sauce, and coconut milk; stir to combine.
  6. Bring the mixture to a gentle boil and add spinach, cooking until wilted.
  7. Return the chicken to the skillet and cook on low-medium heat for another 10 minutes.
  8. Stir in parmesan cheese and remove from heat.
  9. Let cool slightly before serving.
