Stovetop Creamy Garlic Chicken Thighs

Ingredients

The main ingredients

  • ½ pieces bacon, diced
  • 1.5 lbs boneless skinless chicken thighs
  • 1 tbsp Italian seasoning

For the creamy sauce

  • ½ onion diced
  • 8 oz mushrooms, sliced
  • 6 cloves garlic, minced
  • 1 cup coconut milk
  • ¼ cup nutritional yeast
  • ½ tsp sea salt
  • ¼ tsp ground black pepper

For serving (optional)

  • 2 tbsp fresh parsley, chopped
  • 6 cups spinach (or greens of choice)
  • 2 cups cooked rice or cauliflower rice

Instructions

  1. Cook diced bacon in a large skillet over medium heat until crispy, then set aside.
  2. In the same skillet, cook chicken thighs in the bacon fat, seasoning with half of the Italian seasoning, flipping halfway through until cooked through.
  3. Remove chicken from the skillet and set aside.
  4. In the skillet, sauté onions and mushrooms until softened.
  5. Add coconut milk, minced garlic, nutritional yeast, salt, and pepper, stirring to combine.
  6. Return chicken and bacon to the skillet, simmer for a few minutes to combine flavors.
  7. Serve over greens and rice or with a side of choice, garnished with parsley if desired.
