Stovetop Creamy Garlic Chicken Thighs

Instructions
- Cook diced bacon in a large skillet over medium heat until crispy, then set aside.
- In the same skillet, cook chicken thighs in the bacon fat, seasoning with half of the Italian seasoning, flipping halfway through until cooked through.
- Remove chicken from the skillet and set aside.
- In the skillet, sauté onions and mushrooms until softened.
- Add coconut milk, minced garlic, nutritional yeast, salt, and pepper, stirring to combine.
- Return chicken and bacon to the skillet, simmer for a few minutes to combine flavors.
- Serve over greens and rice or with a side of choice, garnished with parsley if desired.
