Skillet Chicken Thighs with Mustard Cream Sauce

Ingredients

Mustard Sauce

  • ¼ cup yellow mustard
  • ½ cup chicken broth
  • ½ cup coconut milk
  • 2 tbsp coconut aminos
  • 1 tbsp fresh thyme, diced
  • 2 tsp Italian seasoning
  • 1 tsp smoked paprika

Main Ingredients

  • 8 pieces bacon, diced
  • 2 lbs boneless skinless chicken thighs
  • 1 unit onion, diced
  • 2 cups mushrooms, sliced
  • 4 cups kale, roughly chopped (optional)
  • unit unit Chopped parsley (optional garnish)

Instructions

  1. 1. Cook diced bacon in a skillet over medium heat until browned, then remove and place on paper towels.
  2. 2. In the same skillet, combine mustard sauce ingredients and whisk together.
  3. 3. Cook chicken thighs in the skillet for 4-5 minutes on each side until slightly undercooked.
  4. 4. Remove chicken and cook onion in the skillet for 3-4 minutes until softened.
  5. 5. Add mushrooms and cook for another 2-3 minutes.
  6. 6. Add mustard sauce to the skillet and bring to a simmer.
  7. 7. Return chicken and bacon to the skillet, cover, and simmer for 4-5 minutes until chicken is cooked through.
  8. 8. Stir in kale and cook until wilted, then serve with chopped parsley if desired.
