Skillet Chicken Thighs with Mustard Cream Sauce

Instructions
- 1. Cook diced bacon in a skillet over medium heat until browned, then remove and place on paper towels.
- 2. In the same skillet, combine mustard sauce ingredients and whisk together.
- 3. Cook chicken thighs in the skillet for 4-5 minutes on each side until slightly undercooked.
- 4. Remove chicken and cook onion in the skillet for 3-4 minutes until softened.
- 5. Add mushrooms and cook for another 2-3 minutes.
- 6. Add mustard sauce to the skillet and bring to a simmer.
- 7. Return chicken and bacon to the skillet, cover, and simmer for 4-5 minutes until chicken is cooked through.
- 8. Stir in kale and cook until wilted, then serve with chopped parsley if desired.
