Freezer-Friendly Bean Burritos

Ingredients

  • 1 cup uncooked long grain brown rice
  • 2 cups water
  • 8 12-inch flour tortillas
  • 1 15-oz can refried beans
  • 1 15-oz can black beans, drained and rinsed
  • cups shredded cheddar cheese
  • ½ cup salsa

Instructions

  1. Cook the brown rice by bringing it and water to a boil, then simmer until water is absorbed.
  2. Lay tortillas on a flat surface.
  3. Spread refried beans, black beans, cheddar cheese, brown rice, and salsa onto each tortilla.
  4. Wrap each burrito tightly by folding in the sides and rolling it up.
  5. To eat immediately, bake in a greased casserole dish at 400ºF for about 20 minutes or pan fry in olive oil until golden brown.
  6. To freeze, wrap each burrito in tin foil and remove air.
  7. To reheat from frozen, bake in the oven at 350ºF for 50-55 minutes or microwave for 1 minute and 15 seconds on each side.
