Instructions
- Preheat the oven to 350°F and line a 9”x5” loaf pan with aluminum foil.
- For the base, whisk together the oats, coconut, almond flour, and salt in a large bowl.
- Add almond butter and maple syrup, mixing well to combine.
- Press the dough into the prepared loaf pan and bake for 15 minutes.
- Allow the base to cool completely in the pan.
- For the chocolate layer, mix almond butter, maple syrup, water, and vanilla extract in a medium bowl.
- Add cocoa powder and salt, mixing until well combined.
- For the crumb topping, mix oats, coconut, arrowroot, and salt in a separate bowl.
- Add almond butter and maple syrup, mixing until large crumbs form.
- Spread the chocolate layer over the cooled base layer.
- Crumble the topping over the chocolate layer and lightly press it down.
- Sprinkle chocolate/butterscotch chips over the crumb layer.
- Bake for 11-13 minutes until the top is golden brown and edges are firm.
- Allow the bars to cool in the pan before lifting them out using the foil.
- Slice into squares and enjoy.
