Ingredients

Base

  • 1 cup old fashioned rolled oats
  • ½ cup unsweetened shredded coconut
  • ¼ cup almond flour
  • ¼ tsp salt
  • cup almond butter
  • ¼ cup maple syrup

Chocolate Layer

  • ½ cup almond butter
  • ¼ cup maple syrup
  • 3 Tbsp water
  • 1 tsp vanilla extract
  • ½ cup unsweetened cocoa powder
  • pinch salt

Crumb Topping

  • cup old fashioned rolled oats
  • ¼ cup unsweetened shredded coconut
  • 2 Tbsp arrowroot flour
  • pinch salt
  • 2 Tbsp almond butter
  • 1 Tbsp maple syrup
  • cup chocolate chips and/or butterscotch chips

Instructions

  1. Preheat the oven to 350°F and line a 9”x5” loaf pan with aluminum foil.
  2. For the base, whisk together oats, coconut, almond flour, and salt in a large bowl.
  3. Add almond butter and maple syrup, stirring to combine, then press the mixture into the loaf pan.
  4. Bake for 15 minutes and allow to cool completely in the pan.
  5. For the chocolate layer, mix almond butter, maple syrup, water, and vanilla extract in a medium bowl.
  6. Add cocoa powder and salt, mixing until well combined, then set aside.
  7. For the crumb topping, mix oats, coconut, arrowroot, and salt in a separate bowl.
  8. Add almond butter and maple syrup to the crumb mixture and combine until it forms large crumbs.
  9. Spread the chocolate layer evenly over the cooled base, then crumble the topping over it and press down lightly.
  10. Sprinkle chocolate/butterscotch chips over the crumb layer.
  11. Bake for 11-13 minutes until golden brown, then allow to cool before slicing into squares.
