Ingredients

  • 1 medium English cucumber, diced
  • 1-2 medium mango(s), peeled and diced
  • ½ small red onion, finely diced
  • ½ medium jalapeno, seeded and finely diced
  • 1 cup fresh cilantro leaves, chopped
  • 1-2 lime(s) zest and juice
  • a pinch coarse salt
  • to taste freshly ground black pepper

Instructions

  1. Combine all ingredients in a glass mixing bowl and adjust seasoning to taste.
  2. Cover the bowl and refrigerate until ready to serve.
  3. Serve with tortilla chips or on grilled fish, steak, or chicken.
