Chicken Marsala

Ingredients

The chicken and coating

  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 15 oz boneless, skinless chicken thighs or breasts

The sauce

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, sliced
  • 8 oz cremini mushrooms, sliced
  • ¾ cup Marsala wine
  • ¾ cup chicken broth
  • ½ cup heavy whipping cream

Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. 1. Mix the flour, salt, and black pepper in a shallow plate and coat the chicken thighs evenly with this mixture.
  2. 2. Heat a skillet over medium-high heat with butter and olive oil, and pan-fry the chicken for 5 minutes on each side until golden brown. Remove from the skillet and set aside.
  3. 3. In the same skillet, melt the remaining butter and sauté the sliced mushrooms and garlic until fragrant.
  4. 4. Add the Marsala wine, chicken broth, and heavy cream to the skillet, seasoning with salt to taste. Reduce heat and simmer the sauce for 5 to 8 minutes.
  5. 5. Return the chicken thighs to the skillet and continue simmering for another 10 minutes until the sauce thickens.
  6. 6. Serve immediately, garnished with chopped parsley.
