Ingredients

The chicken and seasoning

  • 1 ½ pounds chicken thighs (boneless, skinless)
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • ½ cup whole-wheat flour

The sauce

  • 12 ounces baby bella mushrooms (stems removed and sliced in half)
  • 1 cup marsala wine
  • ½ cup heavy cream
  • 5 tbsp butter (divided)

Instructions

  1. Mix Italian seasoning, salt, and pepper in a small bowl and coat the chicken evenly.
  2. Pound the chicken to ½ inch thickness and dredge in flour.
  3. Melt 4 tablespoons of butter in a skillet over medium-high heat, then sear the chicken and mushrooms until golden brown.
  4. Remove the chicken and mushrooms, then boil the Marsala wine in the skillet until reduced by half.
  5. Return the chicken and mushrooms to the skillet, add heavy cream, cover, and simmer until the chicken is cooked through.
  6. Add the remaining butter and cook for a minute to thicken the sauce before serving.
