Sandwich Ingredients

  • 1 recipe tempeh bacon
  • 8 slices whole wheat sandwich bread
  • 2 medium avocados
  • ½ cup chipotle aioli
  • 2 on the vine tomatoes
  • 2 cups romaine lettuce

Tempeh Bacon

  • 8 ounces tempeh
  • ¼ cup vegetable broth
  • 2 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 1-2 tablespoons olive oil

Chipotle Aioli

  • 1 cup vegan mayonnaise
  • 1 can (7 ounces) chipotles in adobo sauce
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt

Instructions

  1. Prepare the tempeh bacon by slicing the tempeh and steaming it for 10 minutes.
  2. Mix the marinade ingredients in a bowl and marinate the steamed tempeh for at least 15 minutes.
  3. Sauté the marinated tempeh in a skillet until browned and crispy.
  4. For the chipotle aioli, finely dice one chipotle pepper and mix it with mayo, adobo sauce, lemon juice, garlic powder, and salt.
  5. To assemble the sandwich, mash half an avocado and spread it on one slice of toasted bread.
  6. Spread chipotle aioli on the other slice, then layer with sliced tomatoes, tempeh bacon, and lettuce.
  7. Close the sandwich and enjoy.
